Test for Thyroid Function

The Barnes basal temperature test is a simple test that you can do at home. If you are having trouble getting rid of excess weight, even though you are eating real food and leaving out the breads and starches, you may have low thyroid function.

Put a thermometer beside your bed. First thing in the morning when you wake, pop it under your arm and doze for a couple of minutes more. You cannot do this test if you sleep with an electric blanket turned on.

In fact, without gratitude, nothing can ever change. Your life will change to the degree that you use gratitude and begin to feel grateful. If you are just a little bit grateful, your life will change a little bit. If you are very grateful, your whole life will change. When you are giving thanks, you FEEL GOOD!

It's not eating fat that's dangerous, it's fear of fat.

The other day I heard of a woman who is losing weight really well on a programme called Optifast. Her diet includes shake mixes, soups and raw vegetables. I am sure this will work if she can stick to it. It will achieve the results she wants, but what will happen when she achieves her goal weight and starts eating ordinary food again?

I have several clients who had great weight loss success on similar programmes, but once they stopped the programme they began to struggle to maintain that new shape.
There is only one answer if you use these products. You must also learn what real food is so you know how to live and eat without hunger for the rest of your life.

This means that you've got to stop eating the grains in all their forms. If you go back on to your '6 or more servings daily of whole grain breads, cereal, pasta or rice' as recommended by the Heart Foundation, you are going to go right back to where you started. Or at the very least, have to work really hard for the rest of your life to maintain your weight and health.

It is not true that those whole grains are healthy. It is not true that you need all that fibre. It is not true that they are necessary for energy. But we are addicted to them. They do make us feel good, because they stimulate extra production of serotonin, the 'feel good' hormone. Once you're off the sugars and grains for good, the cravings go away very quickly.

Man can live very healthily on protein and fat alone. You just have to look at the Eskimos (who eat exclusively seal, whale and their oils and fats) and some African tribes (who eat exclusively meat and fat, blood and whole milk) to know that is true.
The main problem for us is that we have been told not to eat fat. Surprise, surprise, animal fat does not cause heart disease! It's the cheap processed vegetable oils and margarines that do that. We have all been misled.

We must eat the animal fats for the fat soluble vitamins A, D, E and K. It's especially important for our children to eat them so that they grow up healthy, intelligent and strong. We must also eat animal fats for energy or we have to use the grains. And that's where the problem lies.

Ask anyone who eats fat instead of the grains. I do, including cheese, dripping, cream, eggs and butter. And bacon rind, chicken skin and pork crackling. And I am 15 kilos slimmer than I was 10 years ago. My cholesterol levels came down 39% (total) and 50% (LDL) on their own, once I stopped eating breads and cold cereals.

My blood pressure is low and healthy. Other people have lowered their cholesterol levels, their blood pressure, reduced their glucose levels and cured Crohn's disease (and lots more) by giving up all breads, cereals and grains. To learn more about fats go to www.westonaprice.org by clicking here

Real Food for Real Health



Question One: Are we healthier and slimmer now than we were 20 years ago?
Answer: No

Question Two: Then is it possible that some of the information we have been given in the last 20 years is wrong?
Answer: Yes

Question Three: What's gone wrong?
Answer: 'Food' makers have messed with our food.

Real food = that living stuff that has been made first by the plants in our soil and then by the animals that eat those plants. Nothing else is real food.
Real food comes complete with all the vitamins and minerals that the plants and animals put into it. Our body recognises this real food and can use it to grow strong, healthy and happy.

The other stuff that we eat that is called 'food' (most of the stuff in packets and bottles) still needs vitamins and minerals to process it. So our body has to use some of its reserves.

A cabbage grown without sprays is made of a combination of 10,000 natural chemicals. How could man improve on that? How can he possibly believe he can outsmart that cabbage and decide we only need the vitamin C for example?

It is because we eat 'food' in place of real food that we have more heart disease, diabetes and obesity now than 20 years ago. The same disease process, Insulin resistance, causes them all. Gaining weight just happens to be the outward visible sign of that disease process.

Lies, damn lies and statistics:
The food and health professionals have told us all manner of lies. There is a huge amount of information to prove it if you know where to look. There are also many stories of people returning to full health when they start to eat real food again. I meet them all the time. Here is Rozann's story:

Rozann felt so unwell on prescribed medications that she thought she was going to die. She threw away all five of the drugs and planned her funeral. Then, slowly but surely she began to regain her health.
It's been over a year since then and she has learnt what it means to eat real food.

She now does aqua-aerobics three times a week and tends her permaculture garden complete with chickens. She came back to health eating butter, cheese, eggs, and other whole real food.

Imagine this picture of the future: You buy free-range eggs and healthy chickens from the small farm down the road. You buy fresh milk, yoghurt, butter and cheese from one of the small organic dairy farms springing up around the country. You go to the local farmer's market to buy fruit and vegetables grown by local people, in season only. Or even better, you grow your own vegetables without chemical sprays. And you buy your meat from the butcher or a local farmer, freshly cut and packaged. Or use your own. You make really tasty soups and stews using bones and cheaper cuts of meat.

If this vision could be real for us all, how much of a profit would there be in it for the multi-million dollar Food Processing, Dairy, Meat and Food & Grocery boards? NOUGHT!! Their only goal is to make money, so we can't believe anything they tell us.

Some truths:
· Eating fat does not make you fat
· Low fat products do not help you slim
· Low cholesterol is not good for you
· Additives do build up and poison you
· 'Sugar-free' products are more dangerous and more fattening than those with sugar
· Additives like MSG, that are addictive, are put in food solely to make you come back for more
· Baking powder has aluminium added to make your baking light and crunchy
· Grains that are not prepared properly by soaking or allowing them to rise for seven hours are damaging your health
· None of the commercial breads and other grain products are healthy
· If it's in a packet with numbers in the ingredients then it's not real food
· Homogenised milk has cream particles in it that are not natural. Your body doesn't know how to deal with them. Neither this nor low-fat milk is real food
· Cold cereals have proteins in them that have been altered. They are foreign and they are not real food
· Soy milk does not come from a soy cow. It's processed in a factory, it's not real food

The message is simple. If it was made by a plant or an animal or if you could prepare it in your own kitchen (rather than a chemical factory), then it is real food and you can eat it and regain your health and vitality.

The Heart Tick: To use or not to use?

We are told that the Heart Foundation tick is a guide to healthier food choices. Is this true? NO.
* Firstly, the Heart Foundation only takes into consideration the major food groups and completely ignores the thousands of additives put in much of our processed 'food'. Many of these cause cancer, nerve disease, allergies and more. Monosodium glutamate (MSG), for one, causes a raft of health issues, yet is in packets of food that display the heart tick.

* Secondly, when I phoned to talk to them, I was told that they only consider the major food groups. They give a heart tick for foods that have low fat, low sugar, low salt or high fibre. Let's explore these a bit further.

Salt. The salt that they talk about is plain refined salt, which contains only sodium chloride. It also has iodine added, because the manufacturers took the natural sea-salt iodine out when they refined it. (Plus it has other additives to help it keep dry and free-flowing.) Yes, this salt is causing high blood pressure and killing us.

However, we need all sorts of minerals in our diet that exist as 'salts'. Like magnesium, calcium, potassium, chromium, cobalt, zinc, copper, iron ... there are about 60 minerals that we need. Only the white refined salt is bad. Rock salt and Celtic sea salt, containing these minerals, is essential to our survival.

Sugar. This I do agree with, sugar in all of its forms sets up a strong insulin response in our body, which leads to most of our modern diseases including obesity, cancer, heart disease and diabetes.

Our main problem with sugar is that it is addictive. We can get over the cravings in 3 to 4 days.

Fibre. This is many nutritionists and the Heart Foundation's major mistake. We are taught that we need to eat 6 to 11 servings of pasta, bread, cereal and whole grains a day. This is simply not true. All of the grains, even the whole ones, break down into sugar in our gut, go to our blood and then create all the same havoc that sugar does. Even though some of us have seen reports that the old food pyramid is now considered incorrect by many, nothing has happened to change it.

Bread is a major addiction with a lot of people.

Fat. Is all lumped together. We are taught that any fat is bad. This is simply not true. It's only the man-made fats like margarines and the cheap unstable canola, soy, safflower and sunflower oils that are destroying our arteries.

You may be shocked to know that since the 1950s when butter and egg eating declined, heart disease rocketed upwards. You may also be surprised to know that it was as consumption of vegetable oils and margarine spreads went up that heart disease also went up. You are being unintentionally misled by the Heart Foundation's Heart Tick.

Can you trust the tick for some things??
No - The tick will be given to any product that meets the low fat, low salt, low sugar or high fibre guidelines. And then only for the companies who apply for the tick.

Two brands of olive oil get the tick, but another does not. Does this mean that one is no good?
NO - It means that they didn't apply for or pay for the right to use, the heart tick.

A popular brand of Lite cereal (low in fat) gets the heart tick. Is it good for you?
NO - It has 33.3 grams of sugar in every 100 grams. Most people would eat 100g in a serving (not the 45g that they suggest) and this contains a third of a cup of sugar. Not to mention the other grains and cereals in there that are the major cause of Insulin resistance, diabetes and yes, heart disease.

Lite Long life UHT milk gets the heart tick. Is it good for you?
NO - This 'milk' has been completely destroyed as a food. It's a dead, sterile, white liquid and it's only resemblance to cow's milk is that it is white. Calves will die on it.
In the modern, fast, convenient world that we live in it is becoming increasingly important to start thinking for ourselves. Don't believe anything that you see advertised. We've all been misled by the powerful and very profitable drug and food-processing companies.

Death by Modern Medicine

Should we take responsibility for our health back into our own hands to save our lives as these New Zealanders have done?
  • One woman threw away the cocktail of five drugs she was on and slowly but surely recovered her health
  • Another threw away his cholesterol medication after having so much liver pain he could hardly function. The liver pain went away. He's still alive and healthy.
  • Another woman got rid of her own gallstones with a 'soup' of potato peelings
  • And another woman had a painful muscle-deterioration 'disease', that was miraculously cured in three days by stopping her cholesterol medication.
The list goes on and on. It is frightening to discover that in America today the leading cause of death and injury is actually the medical profession . . . yes, a report that was seven years in the making, called "Death By Medicine" has now been made into a DVD. The DVD is called "Death By Prescription" and it tells how thousands and thousands of deaths have resulted from unnecessary or incorrect medical treatments.

In 2001 the total number of deaths caused by conventional medicine was over 750,000. Compare this with heart disease that killed just under 700,000, and cancer at 550,000 deaths in that year.

There are lawsuits underway right now following over 50,000 deaths from the anti-inflammatory drug Vioxx. The statistics are increasing rapidly.

Isn't that incredible? Are we heading down the same steep slippery slope as the American system has gone?

Yes, we still believe that modern medicine will come up with a pill to cure cancer and heart disease, after all that's a lot quicker and much less trouble than having to change our lifestyle isn't it? Overheard at a party was one person saying, "It's okay, I don't have to watch what I eat, I just take a pill for my cholesterol."

I believe our reliance on modern prescription drugs started with the discovery of penicillin in the 1930s. It was a magic drug - no question. People now in their 70s would have been children then and they would have been in awe at seeing people with pneumonia saved from death and their own bronchitis or tonsillitis being stopped in its tracks. I can remember some of that magic myself as a small child with the pain of tonsillitis.

So we grew up in a time when doctors were placed 'on a pedestal'. It takes a natural or not-so-natural disaster now to knock them off - usually a near-death experience like those mentioned above.

Gallbladders - Who needs one?

I asked a small group of people at a health seminar to put up their hands if they no longer had a gallbladder. I was stunned. Exactly half of them.

It seems that many health professionals believe you don't need a gallbladder. The main reason for removing a gallbladder is pain from gallstones. (And it can be excruciating.)

So, do you need a gallbladder? Maybe it was just put there for decorative purposes. Or perhaps it once had some long since forgotten function, like (apparently) the remnants of your appendix.

Well you do need your gallbladder just as much as you need dishwashing liquid. Trying to wash the greasy fat from a roasting pan with lukewarm water is a bit messy. Just like the mess your body is dealing with if you don't have a gallbladder. The fat just doesn't want to mix with the water and be washed away.

The pan is much easier cleaned when you use dish-washing liquid, which emulsifies the fat. Emulsify means to make it mix with water. This is the same job that your gallbladder does for you. It stores the bile that is produced in your liver, to help emulsify the fat. It releases it when it is needed. So don`t let anyone tell you don't need a gallbladder, because to be healthy you need the good fats properly absorbed to make hormones, keep your brain healthy, your cells waterproof and many other things.

Removing a gallbladder: is not the answer. You might as well put on a Band-Aid so you can't see the problem. Just like putting masking tape over the oil warning light in your car so you can't see its message any more.

Signs of a grumpy gallbladder can include: Indigestion and flatulence, pain below the right side of the rib cage and a bitter taste in the mouth. Don't ignore it. Deal with it quickly so that you can help it recover. A grumpy gallbladder is trying to tell you it's unhappy.

Things you can do to cheer it up include:
· Eating lots of vegetables
· Getting exercise
· Stop eating sugar. Sugar makes all your organs grumpy and also causes low chromium and copper. This interferes with the absorption of calcium and magnesium
· Keep your mineral intake high - low calcium is often the cause of kidney stones and gallstones as the body tries to shuffle its limited supply around.

A true story: A woman told me she had been booked in to have her gallbladder removed. However she read about a remedy. She tried it and said she felt her gallstones being passed painlessly at the end of the cure. She rang the nurse and said,
"Great news, I don't need the op any more."
However the nurse didn't agree.
"You have to have it, the stones will come back, and you will have to wait another two years to get the op."
She was talked into going in to hospital. She came round after the op and she was the only one without a jar of gallstones beside her bed. Great, she thought!
The surgeon told her she didn't have gallstones, but he could see the scars where they had been.
"Hooray, so you didn't take my gallbladder out?"
"Oh yes, we still took it out", he replied.
If you have been unlucky enough to have had your gallbladder removed, then I hope you have been told that you need to take bile salts, or bile enzymes with every meal for the rest of your life.

The gallstone cure: Read on to see her very simple recipe to get rid of gallstones.

Gallstone cure

Peel some potatoes fairly thickly. Boil them in water. You are making a 'potato peeling' soup. Strain off the liquid, throw away the peelings and keep the 'soup'.

Drink 5 cups of this soup every day for 5 days. You may find the taste a bit bland, but as you down each cup, remind yourself of the advantages of keeping your gallbladder. It will make living a healthy happy life much easier.

The woman who told me about this recipe had used it and had felt her gallstones being painlessly passed at day five.

Remember if you have your gallbladder removed you will need to take bile salts with each meal for the rest of you life.

Do it sooner rather than later.

Test For Insulin Resistance

This test is an excerpt from Patrick Holford's book, The Holford Diet, which proposes a very similar eating plan to The Slim Shed's plan. It is a very sensible book and easy to read.

All you have to do is count the number of yeses to these 20 questions.
  • Are you rarely awake within 20 minutes of getting up?
  • Do you need tea, coffee, a cigarette or something to get you going in the morning?
  • Do you really like sweet foods?
  • Do you crave bread, cereal, popcorn or pasta most days?
  • Do you feel as if you 'need' an alcoholic drink on most days?
  • Are you overweight and unable to shift the extra kilos?
  • Do you often have energy slumps during the day or after meals?
  • Do you often have mood swings or difficulty concentrating?
  • Do you fall asleep in the early evening or need naps during the day?
  • Do you avoid exercise because you haven't got the energy?
  • Do you get dizzy or irritable if you go six hours without food?
  • Do you often find you overreact to stress?
  • Do you often get irritable angry or aggressive unexpectedly?
  • Is your energy now less than it used to be?
  • Do you get night sweats or frequent headaches?

If you answered yes to ten or more questions, there's a good chance that you are insulin resistant, and struggling to keep your blood sugar level even. You are also three times more likely to have trouble losing weight.

Notches on your belt a guide to heart attack risk

When it comes to the risk of a heart attack the notches on your belt, or girth at waist, are more telling than the bathroom scales according to the latest information out of the UK.

An international study of abdominal obesity has found it is a better guide to the risk of heart disease than body mass index (BMI). The new study shows waist circumference matters more than weight.

Research in over 60 countries; found that in men the heart disease increased by between 20 and 40 per cent for every 14 cm increase in waist size.

In women, the same increase in heart disease risk occurred for every 15 cm increase in waist size.

Although people in the Far East have smaller waists their risk of heart disease increased at the same rate when they gained in girth.

A spokesman said that this is the first time a study of this magnitude has been conducted worldwide in a primary care population. He added that the data would aid medical professionals in identifying patients most at risk.

Experts now believe the type of fat and where it accumulates is more important than the total amount, with excess weight around the stomach being more harmful than fat on the legs and hips. They say that fat deposited inside the abdomen secretes toxins into the bloodstream, raises cholesterol and increases the body's resistance to insulin, essential for controlling blood sugar.

In Britain an estimated 32,000 people a year die from obesity related illnesses. Proof indeed that it pays to keep a track of the notches on your belt if you want to live a long and happy life.

Slimmers shed weight and eat their way to health

When Sherry Elton, pictured at right, started her first Slim Shed course in September 2005, she was hoping for around twenty or thirty people at the Southland venues.

"I'd done everything right", Sherry said. "The material for the presentations was ready, the advertising was in place; and boy did the phone ring to book a space.

"Often I will be talking about the right way to prepare food - for instance, how to make porridge that's good for you - someone will say, 'My grandmother always used to do that'. So you see, much of the information about traditional foods and food preparation has been lost to us."

Many of the people have provided testimonials; such is the confidence they have in the Slim Shed programme.
